240x49mm Tsourkan gyuto in 52100 carbon steel, with a “D” shaped handle in cocoblo, ebony, and brass.
Condition is “rode hard and put away wet”. This knife has been sitting around my shop for years as a future rehab project. I think I got it as part of a trade or something, and I’m really not sure of its history, but it has definitely seen some rough treatment (and rough sandpaper) over the years. It has seen some sharpening and thinning before, it has scratches, and has experienced surface rust. Fortunately the pitting is shallow and cosmetic, but it IS there.
HOWEVER, there is a frickin Ferrari engine under that ugly paint job! To those in the know, Marko Tsourkan’s knives have long been considered top performers and this one is no exception. In better condition I’m guessing this would be a $750 plus knife. I have given it a quick refinishing and a fresh edge to get it ready for sale, and ready to work.
This knife would be a great option for anyone wanting to try a super high performance knife at a fair price, but doesn’t mind scuffs and scars, OR, a knife person who wants a special rehab and polishing project.
