From Australia’s Mert Tansu, Hunter Valley Blades is his more rustic, performance focused, economically minded line of knives. This one is previously owned but never used and is in perfect condition minus one little hairline scratch near the edge (see pic) The 225x55mm blade is 1095 carbon steel taken to 64 hrc, and features an s-grind for improved food release. The round wa style handle is an unknown wood burl, my guess is walnut, with an ebony ferrule.
