I love this knife. This is a vintage Sabatier Jeune stainless chef’s knife in excellent used/restored condition. The size of the blade measures 200 x 37mm or 7 7/8” x 1 7/16”, and is perfect for a “line knife” or a general purpose large petty/ small chefs knife. I’m unsure of the date, my guess would be 70’s, but Sabatier Jeune started making stainless in the 50’s so it’s hard to know. Cosmetically the condition is pretty great for a vintage knife of this type, but it does have some small pockmarks and scratches on the surface. (Please see pics as I try to thoroughly represent imperfections) The handle is near perfect with a very small gap at the point of the heel which shouldn’t be a concern in use, and the knife is structurally sound. I thoroughly cleaned the knife and polished the blade and handle and gave it a proper sharpening, so it is ready for work.
