This a used Kamon Gen 2 production knife from Benjamin Kamon in Austria. Weight is 196g, and dimensions are 248x54mm. Steel is 1.2067 at HRC 62.
This knife has been thinned, cleaned, and sharpened by me. To be completely transparent, I overdid it a bit when thinning the heel and altered the profile a little more than intended. It is still a phenomenal cutter, especially if you’ve never tried an Kamon, and would make an excellent working knife. It feels great on the board, especially if you do like using a rocking motion when cutting. No structural issues, only a little bit of remaining patina.
