Jordan Lamothe 241x57mm integral damascus gyuto. The steel is 1084 and 15n20, and the handle is stabilized big leaf maple burl with a copper spacer. 236 grams.
This is definitely one of my favorites of all time. To me it is pretty much the perfect example of what I like in a knife, from the blade profile to the forward balanced weight to the taper to the look and design. So frickin cool, and if this isn’t a masterpiece, I don’t know what is! I do wish he would make a couple hundred just like this one! Speaking of MASTERpieces, this gyuto was originally purchased in 2020 directly from Jordan and was made shortly before his ABS Master Smith test. This piece is truly worthy of that title.
This one has been used, but relatively lightly. It was sold from my shop to a local, and has only been lightly sharpened once previously, by me. I say “relatively lightly” because there was a healthy amount of patina on the steel, and there are two very small dots of “pitting” present on the bolster and the blade (please see detail pics before purchasing). I gave the knife a cleaning and did a gentle re-etching in coffee to bring back the contrast and finally gave it its second light sharpening. Even with these issues, I think this is a super desirable and iconic knife, and I think this price is a steal.
I have been STRUGGLING to let this one go, as I would really love to keep this in my personal collection.
