Woof, this one’s tough. DO NOT want to let this go, but daddy’s got bills to pay! From my personal collection, this is a 290x62mm (11.5 inches!!!) western integral chef’s knife in 52100 carbon steel with micarta handle. Condition is used, please see pics and read full description before purchase. 

My God, I love this knife. I bought this probably 7-8 years ago, before I had my shop, when Alex was still with Carter Cutlery, working under the Muteki label. I found Alex to be an extremely talented knife maker, with a great eyes for design, and a one of a kind style. Back then I paid $995 for it, which at the time I thought was insane, but I loved it and I’ve never regretted it for a moment. I imagine if it was new today, it would be in the 15-1600 range. It is a LARGE knife, and is slightly unusual for a western, in that it has an entirely flat profile from the heel until 7.5 inches up where it start to gently curve up to the tip. A push cutters dream! If you’ve ever wanted to push cut a stack of 12 bell peppers at a time, this knife is for you! lol. I have used it a lot, and it is a very fun knife, but even more than using it, I have really enjoyed LOOKING at it. I think it’s such an iconic looking knife, with beautifully sculpted lines and understated but refined details. To me this knife is art, and has been a centerpiece in my collection, my wall, and my cutting board the whole time. 

condition- this knife has been used by me, and I was not particularly gentle with it. I have only really sharpened it lightly a couple of times, and it is completely sound construction wise. Cosmetically it is not perfect- lots of fine scratch marks on the blade from use and cleaning and a few small areas of fine pitting here and there. From a distance it looks clean but up close it is definitely visible. Please take a close look over the photos before purchase. I have tried to show condition truthfully, and photographing fine scratches on steel is pretty challenging. New, I believe this knife would retail for 15-1600 these days, so I have tried to price it fairly.
