Previously owned western chef made by Julian Sacco of Sacco knives, this one measures 220x55mm in 52100 carbon steel, paired with some really nice blue dyed big leaf maple burl. Some great details on this one, from the sculpting on the handle to the tapers and grinds, the rounded spine and choil to the satin finish, this is good work all around. He keeps it classy not flashy, but all those little details are there where it matters, and this would make a fabulous daily driver.
This is a consignment knife, and is used. I cleaned the patina on the blade and gave it its first sharpening. Condition “structurally” is great, but cosmetically it does have quite a few scratches on the blade surface from use in a professional kitchen. Please see pics for an example. The satin finish does a great job of hiding the scratches from the eye and camera and could be refinished if someone wanted to, but this knife is made and meant to be used hard.
