Previously owned 245mm gyuto in 52100 carbon steel with red cast resin handle from Don Nguyen. This is a killer knife and a good chance to try this maker at a fair price. From a functional standpoint this knife is in awesome shape, but has a couple cosmetic issues. (Please see pics- I try to accurately represent the condition of a previously owned knife as well as possible, )
Condition details- The blade seemed to be used not many times, as the original edge was still good, but the use was heavy and cleaning and care wasn’t the best. The knife blade has some shallow pitting marks over the blade that regular carbon knife users will be familiar with, as well as some scratching along the edge and scuffs typical of use… I cleaned the patina, put on a working satin finish, and gave it a fresh screaming edge.
The handle has two small nicks on one side, please see pics. Pretty much unnoticeable from a distance.
Overall it looks pretty good, the issues are of the kind that really only show up to the eye when looked at from certain angles. From a working knife perspective, the knife is awesome and basically in like new condition.
