I cleaned and sharpened the blade, and it is in great condition considering its age. There is a little surface level corrosion, but no heavy pitting at all, what you see is mostly just patina. The blade seems as if it has had almost no use, I sharpened it only to remove a little chunk of rust out of the edge near the heel. The handle is “structurally sound” and has been scrubbed and sanded a little, so it is usable but there are gaps between the handle and tang and lord knows what worked it’s way in there, so I would recommend a new one. I don’t really mess with handles or have the time so I’m passing it on. It’s a little higher priced than I’d like but I paid a good bit for it and it seems pretty rare to find one in this good of condition. Condition is very good considering its age, the blade itself has a deep patina but no real pitting, only a few small dimples and some old sharpening marks. It was definitely a larger knife at one point that has been used. The handle has definitely been roughed up in use a little, but it gives it tons of character and there is zero separation of the handle from the tapered tang, so it is structurally sound. I’m unsure of the date, my guess would be 70’s, but Sabatier Jeune started making stainless in the 50’s so it’s hard to know. Cosmetically the condition is pretty great for a vintage knife of this type, but it does have some small pockmarks and scratches on the surface. (Please see pics as I try to thoroughly represent imperfections) The handle is near perfect with a very small gap at the point of the heel which shouldn’t be a concern in use, and the knife is structurally sound.
