This one is a unique carbon steel chefs with ridiculously nice craftsmanship on the handle. The blade itself is 215 x 49 mm in 01 tool steel, with a major wow factor handle composed of some gorgeous buckeye burl, African blackwood, and mokume gane. This is a previously owned blade, but was minimally used and well preserved. We did a light touch up on it, just cleaning up the satin finish of a few minor scratches as well as giving it a fresh new edge, and it is ready to get back to work.
(this knife I believe was made in 2014, and is in excellent working condition, but there are some minor imperfections to the blade- very fine scratches and tiny tip of a needle sized shallow pockmarks that I tend to see from wetter climates on carbon steel, I believe from moisture in the air. They are so small I couldn’t get any to show up in a photo, but the knife is priced accordingly, and personally I think the natural age and wear of a carbon blade adds character, but I like to be forthright with condition.
