I loooooove this little 69mm paring knife from iconic knife maker Jelle Hazenberg. I tend towards using a petty most of the time for smaller work, but for in hand, traditional paring tasks such as garnishes, topping or peeling fruits, popping eyes out of potatoes, etc, I find a small blade, under 3 inches, like this one, to be pretty much indispensable. Most of those knives tend to have very small handles, but I always want something closer to full size, which is rare to find. This one feels AMAZING in hand, the curve slips right into the crook of your palm, and I definitely wish I could keep it. Fruit season is coming up!
The blade is 69x20mm (2.75”) and the steel is 125sc with a great little hamon, and the handle is ebony.
